Midnight Maple Chocolate Loaf

Baked with dark cocoa, sweetened with maple, and spiced ever so softly with cinnamon, this Midnight Maple Chocolate Loaf is meant to be shared with no one. (Unless you must.)

It’s for the quiet evenings when the moon is hidden, the kettle is warm, and your soul wants softness without apology.

Why I Bake This

This is a shadow season recipe. I make it on new moons, rainy nights, or evenings when I need to ground myself—not with greens and broths, but with comfort. With chocolate and maple and warmth that lingers after the last bite.

It’s part cake, part bread, part spell.

Ingredients (Whispered in the Dark)

  • ½ cup salted butter, softened

  • ½ cup maple syrup

  • ½ cup brown sugar

  • 2 eggs

  • 1 tsp vanilla

  • ½ cup sour cream or Greek yogurt

  • 1 cup all-purpose flour

  • ½ cup cocoa powder (go dark if you can)

  • 1 tsp baking soda

  • ¼ tsp salt

  • ½ tsp cinnamon

  • Optional: ½ cup chopped dark chocolate or walnuts

  • Optional: a dash of espresso powder to deepen the magic

The Ritual

  1. Preheat the oven to 350°F. Grease and line your loaf pan like preparing a sacred vessel.

  2. In a large bowl, cream the butter, maple syrup, and brown sugar until smooth and glowing. Breathe slowly. Let your body catch up to your hands.

  3. Add the eggs, vanilla, and sour cream. Stir gently. Whisper what you need more of this week.

  4. Sift in the flour, cocoa, baking soda, salt, and cinnamon. Stir just until combined. Fold in chocolate or walnuts if using. Think of this as the final enchantment.

  5. Pour the batter into your loaf pan. Smooth the top and tap the pan once to settle it. Sprinkle with flaky salt or cacao nibs if desired.

  6. Bake for 45–50 minutes, or until a toothpick comes out with soft, fudgy crumbs. Let it rest before slicing. (Or don’t. I won't tell.)

Serving Suggestions

Serve warm or at room temp. Best enjoyed with:

  • A steaming mug of chai, oat milk, or deep red tea

  • Your journal and a soft blanket

  • A tarot card pulled and left by the slice

  • Candlelight and complete silence
