Gather Your Ingredients:
3 sticks of unsalted butter (softened by the warmth of your hearth)
1½ cups granulated sugar
2 eggs
4 tsp vanilla extract (measured with your heart)
1 tsp almond or lemon extract (for a subtle spell of brightness)
4½ cups all-purpose flour
1 tsp baking powder
½ tsp salt
Spellwork Instructions:
In the bowl of your stand mixer, cream together the softened butter and sugar on high speed until light and fluffy—about 2–3 minutes. This is where the sweetness begins to rise.
Scrape down the sides of the bowl like a good kitchen witch.
Add the eggs, vanilla, and extract. Mix on medium speed until fully combined. Scrape down once more to make sure nothing’s hiding in the corners.
In a separate bowl, whisk together the flour, baking powder, and salt—your dry magic.
With the mixer on low, add half of the dry mixture to the wet. Pause, scrape, and add the rest. The dough should be pliable, soft, and not too sticky. If it's clinging to your fingers like a needy familiar, sprinkle in a bit more flour.
Once your dough is ready, divide it into two enchanted spheres, flatten slightly, and wrap in plastic. Chill in the fridge for at least 20 minutes, or up to 2–3 days. The longer it rests, the more the flavors deepen.
